How to Make Peanut Butter Cookies in an Air Fryer

Cris here.

We love peanut butter cookies and I was thrilled to figure out how to make a low carb sugar free version of one of our favorites! This recipe makes those delicious small crisp peanut butter cookies- yum! (Note: I am still working on a low carb version of the softer classic peanut butter cookie I used to make from my childhood.)

While figuring out a low carb peanut butter cookie recipe was great, I was even more excited to figure out I could make an air fryer version in my Ninja Foodi while we are on the road in our RV!

You can use a traditional air fryer or the Ninja Foodi to bake these babies up on the go. If using a traditional air fryer, you can place them directly in the air fryer basket. Or, if using the Foodi you can use the air crisp basket (or even a perforated pizza pan on a trivet). We like to bake ours in batches of 6.

How to Make Sugar Free Peanut Butter Cookies in an Oven

If you would rather pop these in the oven, just spread the cookies out at least an inch a part on a cookie sheet. If baking in oven, you can bake in batches as big as your cookie sheet will allow.

We haven’t ever tried this with monk fruit peanut butter, so we can’t say if that is the issue. Try using 100 percent peanuts peanut butter.

We haven’t tried this recipe using molasses instead of a sugar substitute. The sugar substitute has less carbs than molasses and is not a thick syrup. I am not sure how it would alter the end product. If you give it a try, let us know how it turns out!

FAQs

Can Airfryer be used for baking cookies? ›

Since air is constantly rushing around the inside of the air fryer, you'll want to use the cookie dough to weigh down the parchment paper, as it will want to flap up and could squish your cookies, causing them to become misshapen. You can use the air fryer for any cookie recipe you want to bake!

How many carbs are in sugar free peanut butter cookies? ›

Peanut butter cookies, store bought, sugar free (3 each) contains 16.3g total carbs, 11.2g net carbs, 9.1g fat, 2.8g protein, and 148 calories.

Why can't you use natural peanut butter in cookies? ›

Using natural peanut butter requires a serious stir, Cook's Illustrated notes. Those oils and fats need to be completely reintegrated into the other solids before it can be used. Otherwise, parts of the peanut butter will be drier than others and it could affect the final texture of your cookies.

What is the best peanut butter for baking cookies? ›

Peanut butter: Creamy peanut butter is ideal for this recipe because crunchy peanut butter creates an overly crumbly cookie. You can use processed peanut butter such as Jif or Skippy, or natural-style peanut butter.

Are cookies better in the oven or air fryer? ›

The air-fried cookies weren't as round and flat as the oven-baked version but they were slightly chunkier and toastier, which I preferred. They had similar crispy outer layers like the oven-baked cookies and I was a huge fan. The air fryer made the cookies perfectly crisp with a golden-brown, crunchy outer layer.

Can I use air fryer instead of oven for baking? ›

It turns out that what I thought was a gimmick is actually one of the appliance's greatest strengths: Essentially a small convection oven, the air fryer is a great tool for baking, especially small-batch baking, and cooking when it's too hot to turn on the conventional oven.

What cookie can a diabetic eat? ›

Chocolate Peanut Butter No-Bake Cookies

With no added sugar, it provides a sweet treat lower in carbs than traditional chocolatey cookies. Just be sure to opt for an all-natural peanut butter that does not contain any added sugar. Because it's a no-bake recipe, you can make it and enjoy it in just minutes.

Can diabetics eat sugar free cookies? ›

Sugar substitutes don't affect your blood sugar level. In fact, most artificial sweeteners are considered "free foods." Free foods contain less than 20 calories and 5 grams or less of carbohydrates, and they don't count as calories or carbohydrates on a diabetes exchange.

Do peanut butter cookies raise blood sugar? ›

Research has shown that peanuts can help control blood sugar in both healthy individuals and those with type 2 diabetes. Peanuts and peanut butter have even been shown to help lessen the spike in blood sugar when paired with high-carbohydrate or high-GL foods.

Is it better to bake peanut butter cookies with butter or shortening? ›

Yes, shortening yields chewier cookies than butter does, because butter contains water and shortening doesn't. But you can easily make up for butter's crisping tendencies by using crucial ingredient No. 3… Brown sugar instead of white sugar.

Why are my 3 ingredient peanut butter cookies falling apart? ›

The wrong type of peanut butter may cause them to fall apart. Or using old eggs may create crumbly cookies. How long do peanut butter cookies last?

Why do you put fork marks on peanut butter cookies? ›

The baking company shared that the reason has to do with the consistency of the dough. Because peanut butter cookie dough is dense, using a fork helps flatten it into the ideal shape and thickness, allowing it to bake evenly.

Is Skippy or Peter Pan peanut butter better? ›

The best supermarket stalwart

Skippy's robust peanut flavor lingers on the palate longer than that of other regular peanut butters, such as Jif and Peter Pan, and it has a pleasant texture that doesn't feel waxy like some of the other oil-added peanut butters we tried, including Reese's and Target's Good & Gather.

Can you bake peanut butter cookies without parchment paper? ›

Yes, you can bake cookies without baking paper. I've been in the same situation before. Instead of baking paper, you can use greased aluminum foil or simply grease the baking tray directly. Just ensure the surface is well-greased to prevent sticking.

Why do my peanut butter cookies fall apart after baking? ›

One reason could be that you overcooked them. Another reason could be that you didn't add enough moisture to the dough. Finally, your peanut butter cookies might be dry and crumbly if you used a natural peanut butter that doesn't have any added oil.

Do air fryer cookies taste good? ›

As if we needed another reason to love our air fryer, turns out, it makes THE BEST cookies, too. Gooey on the inside, crisp on the outside, just a couple minutes to prep, and you don't have to turn on your oven.
